You're absolutely correct about wages reflecting tipping habits: people in countries where tips aren't customary have more of their income guaranteed than, for example, in overtipping USA. As a matter of fact, the Wall Street Journal reports that Wolfgang Puck advocates that "the industry should lobby to establish a federal law that allows restaurants nationwide to exempt waiters who earn tips from the minimum wage". This of course as a result of the average tip going from 10% to 15% to even more.

Bottom line: NEVER overtip!!

Posted to: How To... Tip Around the World

Great post. While in China for business earlier in the year, we bought unlocked phones. Then when I headed over to Australia, I just hit the cell phone kiosk at the airport, and presto - $9.95 for my SIM card (and Australian number) and less than $30 for a month worth of calls.

Posted to: How to "Travel Proof" Your Cell Phone

Most fish are prepared alive; in Japan, the standard isn't to transport fish frozen, but rather alive in "fish tank" trucks. Whether or not you'll eat them as the heart is still beating... probably the reason they serve most without the head and heart.

Posted to: Exotic Dishes of Japan

I agree about the whale meat. The only thing I've dared to try so far that's on this list is the red bean paste, which is delicious. I've had squid ink in Mediterranean food, but never in Japanese dishes - I'd be interested to try it.

The pufferfish video put me off my lunch. I cannot believe that poor fish is alive for about the first 30 seconds.

Posted to: Exotic Dishes of Japan

I'm a Taiwanese and I like Japanese food a lot. Let me comment on each item in my opinion:
1.Nattō: it's wonderful if you got used to it, just think about it's nutritious content. The taste will be good while you lose the feeling of your tongue!
2.Basashi is extremely tasty, I like it. Can you offer me one more dish?
3.Whale meat is not very delicious, taste a little bit hard. For those nice creatures' sake, please don't eat it.
4.Takoyaki is quite normal in Taiwan, and it's one of girls' favorite snack. I love it!
5.Ikizukuri: in Taiwan, people even cook a live fish in 3 way, first dish is the same as seen on the video, second dish is fried fish meat and the third dish is. It's must be a big fish weighs at least 2 kilos. Super delicious!
6.Hot spring cooks: in Taipei, there are also hot springs and people will gather to cook eggs in a camping, very interesting.
7.Shirako: it is tasty, but I bet westerners will feel sick for just looking at it. Why not give it a try?
8.Red bean cake is very popular in Taiwan as well, I think people learned it from Japanese, a very good dessert, might be very sweet depending on the cook.
9.Squid ink food: you'll like it if you get used to the wonderful.. uh.. smell.
10.Fugu is the only thing I don't wanna try. I heard there's still a small chance of.. getting the jackpot...

Posted to: Exotic Dishes of Japan

Emma, Thanks for an interesting list, tho I was expecting a list of the usual Fodor's, Planet Earth, etc., and am actually grateful NOT to be seeing such. What I would prefer, though, is more bibliographic info—-number of pages, illustrations, index, publisher, and possibly price, certainly original pubdate, and maybe even edition number. But even Amazon too often hides that info, infuriatingly enough!

Posted to: Top Travel Books of 2008
